RECIPE BLAST: VEGAN CHOCOLATE CHIP PROTEIN COOKIES

Life hack 101:  How to feel slightly less guilty eating chocolate chip cookies.

Oh hello!  It has been an awfully long time since I last posted something up for you guys.  I’ll fill you in quickly with what’s been happening the last SIX months since my last post.  As you know, I was living in Japan last year.  At the end of the year, I moved back to Brussels, where I had been living prior to my year in Japan.  In January, I found a new apartment, moved in, and starting re-building my life here in Europe.  First priority was getting my personal training business back up and running!  I started working at two different gyms and things are hopping.  Now I’ve set my sights on completing a few new projects, which I will hopefully be filling you guys in on very, very soon.  My powerlifting adventures are still happening – while it has been a rather uneventful year thus far in terms of competitions, I think I will be able to get a competition or two in the bag by the end of the year.  More to come on that laterrrrrr.  I am also looking forward to bringing more content to you guys on the regular, so keep an eye on the blog and YouTube channel!  In the meantime, follow me on Instagram for daily updates here.

Now, I’ve been hearing a lot over the past year or two about Lenny & Larry’s protein cookies.  I’ve never tried them, but just the other day, a new friend of mine brought them up.  So I got curious.  I googled Lenny & Larry protein cookie recipes and found one on this website.  I tweaked a few things (no way I’m using palm margarine, whatever that shit is) and came up with this really good cookie!  The cookies are thick and brownie-like.  I did a little follow up research on the Lenny & Larry’s website and noticed that they use vital wheat gluten, likely to give the cookies a chewier consistency.  So that is definitely something I will mess around with later.  For the moment, I think these cookies are delicious and I want you guys to enjoy them yourselves!  Now, these aren’t the healthiest cookies ever, but they definitely pack a bit more of a nutritional punch than your traditional chocolate chip cookie.  So if you’re going to indulge, homemade is always better than industrial.  The best thing about cookies is that they’re super quick to prepare and cook, so in less than 25 minutes, you’ll have your cookies and can eat them, too.  These have a yummy grain-like taste that kind of reminds me of baby cookies???  Not sure when I was eating baby cookies, but the taste is familiar.  I also really like that they’re not cavity-inducingly sweet.  They’re just, just right.  If you make them, leave a comment to let me know what you think!


LENNY & LARRY’S COPYCAT COPYCAT VEGAN CHOCO CHIPPY PROTEIN COOKIES

(Makes 12ish normal size cookies or 6ish yuuuuuge ones)

Ingredients

🍪 1/2 Cup Coconut Oil

🍪 1/2 Cup Dark Brown Sugar 

🍪 1 TSP Ground Chia mixed with 2 TBS water

🍪 2 TSP Blackstrap Molasses

🍪 1 TSP Vanilla Extract (optional, but always makes cookies better)

🍪 1/2 Cup Protein Powder (my homemade mix is pea, brown rice and hemp) 

🍪 1 1/4 Cup Flour (I mixed white/wheat)

🍪 3/4 TSP Baking Soda

🍪 1/4 TSP Salt

🍪 1/4 to 1/2 Cup Soy Milk (until cookie dough texture is achieved)

🍪 3/4 Cup Dark Chocolate Chunks (I chopped up a chocolate bar – the darker the better!)

Steps:

1.) Preheat oven to 185C/370F

2.) Mix wet ingredients (except soy milk)

3.) Mix dry ingredients.

4.) Mix wet and dry ingredients, then add soy milk until cookie dough texture is achieved.

5.) Add chocolate chips.

6.) Grab a small handful of dough and flatten it out to your desired shape/thickness – the cookies won’t spread much.

7.) Cook 9-11 mins.

8.) Let cool, then eat that shit.
